Adding Some Variety

Most people who know us know that Murray and I love to cook. Lately Murray has been doing much more of the cooking than me, but I have been starting to contribute a little more every day. I will say that I usually do come up with the menu and more recently even start dinner, but Murray has been the one to finish everything off, if not cook the entire meal. Thank you Murray, you are a wonderful husband and daddy!!!

I tend to get frustrated when planning meals because I feel like we get stuck in a rut, especially with side dishes. It seems like we always have brocolli, carrots or sweet potatoes. I am always looking for new, interesting, quick side dishes. The other day in the grocery store I saw acorn squash and thought I would give it a try. It was awesome!!! And so easy! So for all of you out there who are looking for something different and easy I thought I would share my dish.

**Disclaimer: I will say this is not an exact recipe. Any of you who need exact measurements, I am sorry. I just sort of mixed things together. Sorry Mom. But it is hard to mess this one up. Also, I made this for just Murray and me. One acorn squash feeds two.

Ingredients:
Acorn Squash
Butter
Brown Sugar (I used dark) - about 1 tbsp
Cinnamon - oh maybe 1/2 tsp to 1 tsp
Pinch of Nutmeg
Pinch of All Spice
Pinch of Ground Cloves
Pinch of Salt
Pinch of Pepper

Preheat oven to 350. Cut squash in half and scoop out seeds. Fill dish with about one inch of water. Bake squash, skin side up, for 30 min. Melt about 1/4 stick of butter (you can never use too much butter!). It works a little bit better if butter is not quite melted all the way. Mix in rest of ingredients with butter. It would be hard to mess this up, just remember a little bit of nutmeg goes a long ways. After the squash has baked for 30 min, drain water and flip over. Fill the squash with butter mixture and spread over all the squash. Bake for 30 more minutes. The squash should be very tender. If not, just cook a little longer. Delicious!!!

  2. i need more dinner ideas. i can pour through magazines and cookbooks but i have a hard time coming up with new menus. i love acorn squash!
