Calling All Moms...

I feel like I am stuck in a major rut for the kids for lunch. We can only do grilled cheese or peanut butter sandwiches so many times. Does anyone have any suggestions for quick, healthy meals for lunch?

  1. I need suggestions, too. But lately, I have been buying or making chicken salad and will pulse it in the food processor until smooth, and make sandwiches with it for Britton.

  2. Forgot to mention why I purée it. B won't eat super chunky foods, but also I can add healthy things like bell peppers, carrots, etc to chicken salad and he'll eat it up.

  4. pasta, avocado, carrots, hummus, yogurt, cheese..i think as long as you aim for a protein, carb, fruit or veggie, you can serve it any way you please!:)

JR will not eat a vegetable to save his life -but this week he is loving a pasta dish with pureed spinach and pesto. the recipe is a barefoot contessa one which you can find on foodnetwork.com. i think it is called pasta, peas and pesto. it makes a ton - and is SO yummy! i also add cooked chicken for extra protein. love all of the new pics! can't believe ella is 3!!!
